Ingredients (Makes 4–6 small flatbreads):

  • 250g plain flour (plus extra for dusting)
  • 1 tsp baking powder
  • ½ tsp salt
  • 150g Greek yoghurt (full fat works best)
  • 1 tbsp olive oil

Method:

  1. Mix the dough: In a large bowl, combine the flour, baking powder, and salt. Stir in the Greek yoghurt and olive oil. Mix until it comes together, then knead by hand on a floured surface for 2-3 minutes until smooth.
  2. Rest (optional): Let the dough rest for 10-15 minutes. This isn’t essential, but it makes rolling easier.
  3. Divide and roll: Split the dough into 4-6 equal pieces. Roll each one into a rough circle or oval, about ½ cm thick.
  4. Cook: Heat a dry pan (non-stick or cast iron works best) over medium heat. Cook each flatbread on each side for 1–2 minutes, or until golden brown with light char marks.
  5. Serve warm: Brush with olive oil and a sea salt or oregano sprinkle.

  • ½ cucumber, grated
  • 1 clove garlic, finely minced
  • 1 tbsp olive oil

  • 1 tsp lemon juice
  • Salt and pepper to taste

Method:

  1. Prep the cucumber: Grate the cucumber and squeeze out as much liquid as possible using a clean tea towel or kitchen paper.
  2. Mix it up: In a bowl, combine the yoghurt, grated cucumber, garlic, olive oil, lemon juice, and herbs.

  • 2 red peppers (or use jarred roasted peppers to save time)
  • 150g feta cheese
  • 1 tbsp olive oil

Method:
