3 Quick Midweek Meals – Perfect for our Cooked Chicken

As always with a GSN Recipe blog, you’ll not have to read a life story or a 1000-word anecdote about a trip to the lakes we may or may not have taken – straight to food, and how to make it…

In this blog, we’ve picked three of our recent gem-recipe finds and swapped in our chicken – simmer down on that prep time.

Each recipe should take around 10 minutes to prepare and this blog should take you about 8 minutes to read.

We’ve tagged the original creators with the recipe, if you enjoy it, make sure to give them a follow and let them know you’ve tried it!

Slimming Gym and Gin – Pizza Bagels

This one feels like a bit of a cheat, but Jamie Christian (read the blog here) got us hooked on bagels, and this is a new twist on the big man’s special.

What you’ll need:

Your choice of bagel: we opted for sesame.

Tomato puree – 2 tbsp.

Dried Oregano – 1 tsp.

Garlic powder – 1 tsp.

Pepperami – 1 Mini (other Italian-style meats will work)

Grate Mozarella – 40g

Fresh Basil

GSN Chicken Bites – Fajita (BBQ or Panko is also good!)

How to do it:

Lindsey recommends using an AirFryer for this, if you’re without one, a standard over will do the trick, 10 mins on 180° (until the cheese starts to brown)

  1. Preheat your air fryer to 180°.
  2. Mix your tomato puree with the oregano, garlic and a small amount of water.
  3. Spread your mixture onto both sides of your sliced bagel
  4. Top with your GSN Chicken Bites (sliced) and Pepperami (sliced)
  5. Add the cheese
  6. Bake in the Air Fryer for 5 minutes then serve topped with a little chopped basil to taste.

 

Meg.ofitnessSpicy Mozzarella & Chicken Pasta

Super quick. Super tasty, not a fan of spice? Leave the chillies out, simple.

What you’ll need:

Serves 1

Uncooked pasta – 60g

Chorizo – 20g

Onion – 1 small

GSN Steam Cooked Chicken Breasts – 1 per person

Tomato purée – 1tbsp

Single cream (low-fat cream) – 40ml

Spinach – 1 hand full

Garlic, paprika, crushed chillies – 2 pinches of each

Parmesan – 10g

How to do it:

  1. Add a pinch of salt to your pasta water, bring to the boil and add pasta.
  2. Defrost your chicken breast as per the packaging instructions.
  3. On low heat cook your chorizo, simmer for a few minutes then add the onion and once browning add the chicken, diced.
  4. Add the tomato puree and cream, along with the garlic, paprika and chillies
  5. Add the pasta and spinach, and mix well.
  6. Serve and top with parmesan.

Jumping on the bandwagon here, and I’m not ashamed of it. Easy, messy, unskilled (reminds us of Johnny in our office)

  1. Start with 2 big handfuls of lettuce.
  2. Add 6 slices of each: ham, pepperoni, salami, provolone cheese, tomato slices, 100g of GSN Chicken Bites (Fajita or BBQ).
  3. Add 60g of fresh chillies, and red onions and start chopping.
  4. Once it gets a good rough chop, add a squirt of mayo, 2/3 tbsp. olive oil and red wine vinegar, 1 tbsp Italian seasoning and salt/pepper to taste.
  5. Continue chopping until everything is mixed well and chopped to your preference.
  6. Scoop it into a sub roll and enjoy!
